Conceit
By Nate Paul
Compounded fish bits and preservatives present an imitation
that many people buy.
It’s cheap;
the hot dog of the sea.
Surimi seafood.
Fish flesh minced and mutilated,
blended, heated, pressured into mimicry.
A hint of honesty extract for flavor.
Pollock
is a common source of surimi.
The truth that hurts:
Pollock goes by the name Krab. Or Jackson. But not Paul.
The cost of the lie is one-third that of honesty
and it tastes so similar.
Without heed for nutritional value,
many people buy imitation crab.
